Ideal for roasting or grilling, it’s perfect for a sophisticated dinner that highlights the game’s distinct flavour. Sometimes called “Venison Rack” or “Loin Rack,” it makes a stunning centrepiece.
Venison French rack – high in iron, low in fat and cholesterol, this is a stunning dinner party cut. Sear quickly in a pan and cook whole in a hot oven, cover and rest before serving. Best served medium rare. Important not to overcook as due to the low fat content overcooking will dry it out.
