Delicious Winter Lamb Rumps Recipe with Seasonal NZ Ingredients

Ingredients:

  • 2 Lamb Rumps, boneless or bone-in
  • 2 carrots, sliced
  • 2 parsnips, sliced
  • 1 leek, sliced
  • 3 garlic cloves, crushed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1 cup red wine (optional)
  • 1 cup beef or vegetable stock

Method:

  1. Preheat your oven to 180°C (350°F).
  2. Rub the Lamb Rumps with olive oil, crushed garlic, salt, and black pepper.
  3. Heat a frypan over medium-high heat and sear the lamb on all sides until browned.

  7. Roast in the oven for 20-25 minutes for medium-rare, or adjust time to your preferred doneness.
