Thick Cut Streaky Bacon Recipe: Bacon-Wrapped Chicken Bites

Ingredients:

  • 500g thick cut streaky bacon
  • 500g chicken breast, cut into bite-sized pieces
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 tablespoons fresh chives, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Toothpicks

Instructions:

  1. Preheat Oven: Preheat your oven to 200°C (390°F). Line a baking tray with baking paper for easy clean-up.
  2. Prepare the Filling: In a bowl, combine the softened cream cheese, shredded cheese, chopped chives, garlic powder, onion powder, salt, and pepper. Mix well until smooth.
  3. Wrap the Chicken: Take a piece of chicken, scoop a small amount of the cheese mixture into the centre, and wrap a slice of thick cut streaky bacon around it. Secure with a toothpick. Repeat until all chicken pieces are wrapped.
  4. Place on Baking Tray: Arrange the bacon-wrapped chicken bites on the prepared baking tray, ensuring they are spaced apart for even cooking.
  5. Bake: Bake in the preheated oven for 20-25 minutes or until the bacon is crispy and the chicken is cooked through. You may want to turn them halfway for an even crispiness.
  6. Serve: Remove from the oven and let cool slightly before serving. These bites pair perfectly with a dipping sauce, such as BBQ or ranch.

Tips:

  • For extra flavour, marinate the chicken pieces in your favourite seasoning or sauce for a few hours before wrapping them.
  • Feel free to add additional spices to the cheese mixture for a kick of heat!
