Juicy Skin-On Free-Range Chicken Breasts with Herb & Veggie Medley

Ingredients:

  • 2 skin-on free-range chicken breasts (New Zealand sourced)
  • 2 tbsp olive oil (preferably cold-pressed from NZ olives)
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 lemon, zested and juiced
  • 2 medium kumara (sweet potato), peeled and chopped
  • 1 cup green beans, trimmed
  • 1 red onion, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C (fan-bbq or oven).
  2. Season the chicken breasts generously with salt, pepper, lemon zest, and half of the minced garlic.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat. Place the chicken breasts skin-side down and cook for 4-5 minutes until the skin is golden and crispy.
  4. Flip the chicken and add the remaining garlic, rosemary, and thyme to the pan. Squeeze over lemon juice.
  5. Add kumara and red onion around the chicken in the skillet.
  6. Transfer the skillet to the oven and roast for 20-25 minutes, until the chicken is fully cooked (internal temperature 75°C).
  7. In the last 5 minutes, add green beans to the pan to cook until tender.
  8. Remove from oven, let rest for a few minutes, then garnish with fresh parsley.
  9. Serve hot with roasted kumara and green beans, and enjoy a wholesome Kiwi-inspired meal.
