The Perfect Rump Steak Recipe

Ingredients:

  • 2 x 300g rump steaks, trimmed
  • Olive oil or butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Garlic, optional (2 cloves, crushed)
  • Fresh herbs (like rosemary or thyme, optional)

Instructions:

  1. Preparation:
    • Remove the rump steaks from the fridge and allow them to come to room temperature (about 30 minutes before cooking). This helps them cook more evenly.
  2. Seasoning:
    • Pat the steaks dry with paper towels to remove excess moisture. This will help achieve a good sear.
    • Generously season both sides with salt and freshly ground black pepper. You can also add crushed garlic and fresh herbs if desired for extra flavour.
  3. Cooking:
    • Heat a heavy-based frying pan or grill over medium-high heat. Add a drizzle of olive oil or a knob of butter. If using a grill, ensure it’s well preheated.
    • Once hot, place the steaks in the pan or on the grill.
    • For medium-rare, cook for about 3-4 minutes on one side without moving them. Flip the steaks over and cook for another 3 minutes. Adjust the time for your preferred doneness:

    • Once cooked to your liking, transfer the steaks to a plate and tent them loosely with foil. Allow them to rest for 5-10 minutes. This helps the juices redistribute and ensures a more tender bite.
  5. Serving:
    • Slice the steak against the grain to maximise tenderness. Serve with seasonal vegetables or a fresh salad, and perhaps a side of roasted potatoes or kumara.

  • Use a Meat Thermometer: If you’re unsure of the doneness, a meat thermometer can help. For medium-rare, aim for an internal temperature of about 55-57°C (130-135°F).
