Lamb Koftas Recipe

These delicious lamb koftas are perfect for a Kiwi BBQ or a quick weeknight dinner. They are packed with flavour and can be served with a side of yoghurt sauce and fresh salads.

Ingredients:

For the Koftas:
– 500g lamb mince
– 1 small onion, grated
– 3 cloves garlic, minced
– 1 tablespoon fresh parsley, finely chopped
– 1 tablespoon fresh mint, finely chopped
– 1 tablespoon ground cumin
– 1 tablespoon ground coriander
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon chilli powder (optional, for heat)
– 1 egg, beaten (optional, for binding)
– Skewers (soaked in water if using wooden ones)

For the Yoghurt Sauce:
– 1 cup plain Greek yoghurt
– 1 tablespoon fresh lemon juice
– 1 teaspoon garlic, minced
– 1 tablespoon fresh mint or parsley, finely chopped
– Salt and pepper to taste

Instructions:

1. Prepare the Kofta Mixture:
– In a large bowl, combine lamb mince, grated onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, pepper, and chilli powder if using.
– Mix well until all ingredients are evenly combined. If desired, add the beaten egg for binding.

2. Shape the Koftas:
– Take a handful of the mixture and shape it around a skewer, forming a log about 10–12 cm long. Repeat until all mixture is used.

3. Cook the Koftas:
– Preheat your grill or BBQ to medium-high heat.
– Cook the koftas for about 8–10 minutes, turning occasionally, until browned and cooked through. They should have an internal temperature of 75°C (165°F).

4. Prepare the Yoghurt Sauce:
– In a separate bowl, mix Greek yoghurt, lemon juice, minced garlic, and chopped herbs. Season with salt and pepper to taste.

5. Serve:
– Serve the lamb koftas hot with the yoghurt sauce on the side. They pair well with pita bread, fresh salads, or grilled vegetables.

Tips:
– You can also bake the koftas in the oven at 200°C (400°F) for 20-25 minutes, turning halfway through cooking.
– Feel free to customise the herbs and spices to suit your taste!
