Free Range Chicken Breast with Honey and Lemon Glaze

Ingredients:

  • 2 free-range chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish (optional)

Instructions:

  1. Prepare the Marinade:
    • In a small bowl, combine the olive oil, honey, lemon juice, lemon zest, minced garlic, salt, and pepper. Mix well until combined.
  2. Marinate the Chicken:
    • Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and marinate in the fridge for at least 30 minutes (up to 2 hours for extra flavour).
  3. Preheat the Oven:
    • Preheat your oven to 190°C.
  4. Cook the Chicken:
    • Remove the chicken from the marinade (reserve the marinade for later) and place the breasts in a baking dish. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 74°C.
  5. Prepare the Glaze:
    • While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a boil and reduce to a simmer for about 5 minutes to thicken slightly.
  6. Glaze the Chicken:
    • Once the chicken is done, remove it from the oven and brush the glaze over the top. Return to the oven for an additional 5 minutes.
  7. Serve:
    • Let the chicken rest for a few moments before slicing. Serve with your choice of sides, such as roasted seasonal vegetables or a fresh garden salad. Garnish with fresh parsley or thyme if desired.
